Roll out the barrel

Today down at Steampunk Towers, I shall be filling a 55 gallon French Oak barrel with our truly lovely Voodoo Spice Rum. The barrel used to hold red French wine, so we are expecting a delicate infusion of jammy, fruity flavours from the wine and toasted oak from the barrel to add to the vanilla, ginger and black pepper notes in the original rum.

Not sure yet how long we will barrel age this rum, but after six months we will take a sample, and every month thereafter until we are satisfied with the result.

Next job: choosing the bottle and designing the labels!
